Mindy's Baked Goods

My name is Mindy Fitzpatrick. My husband, Matt, and I own The Friendly Market. When we opened the market in the spring of 2008, my main job was to provide homemade baked goods to be sold at the market. I started with simple well-known items such as cookies, breads and pies. Very soon after opening, I realized people were interested in a little something different, so I slowly started introducing some family recipes that were out of the ordinary and not your run of the mill baked goods. New additions early on included basil bread with fresh mozzarella, mango bread and an immediate hit, tomato pie. Almost overnight there became a high demand for my baked goods and a great interest to see what I would bring to the market next.

I continue to create and search for new recipes that not only are tasteful and different, but also include the freshest, local ingredients.

As a Morehead City native, I graduated from West Carteret High School as a basketball All-American. I went on to become a three time All-American at the University of South Carolina and graduated with a degree in exercise physiology. In 1994, I was crowned the National Women’s Surfing Champion and I continue to compete on the local and national level. The Carteret News-Times named me Athlete of the Century in 2000. In 2002, I was in the first class to be inducted in the West Carteret High School Hall of Fame. I also started a non-profit basketball clinic for girls called Mindy’s Hoop Clinic.

My husband, Matt, and I have two wonderful children, Matt Jr, who is 10 and Annie, 7.
